Sushi Edomata opened in April 2025 carrying the 37-year legacy of Sushi Sam's Edomata, a San Mateo institution founded in 1988 by Japanese chef Sam Sugiyama. When Sugiyama retired in late 2024, he entrusted the kitchen to Chef Koichi Ito, who trained under Sugiyama and has maintained the restaurant's signature approach of sourcing premium fish directly from Japan. The menu is printed daily and centers on pristine nigiri, sashimi, and a rotating omakase. Signature items include sweet shrimp with heads fried tableside as tempura, an array of specialty Japanese fish rarely seen elsewhere in the Bay Area, and a housemade green tea tiramisu. The casual dining room fills quickly each evening, and reservations are strongly recommended.
