Chikara Ono came to the United States from Kyushu, Japan in 1986, trained in traditional kaiseki restaurants in Japan during extended return visits, and built a reputation in Oakland through his beloved B-Dama izakaya before opening Delage as his premium omakase project. The restaurant's name blends 'Dela,' Ono's childhood nickname in Kyushu, with 'ge,' the Kyushu dialect word for house or family — making every meal a personal expression of his heritage. Executive chef Mikiko Ando presides over the small six-seat sushi counter with meticulous precision, guiding guests through eight courses that blend high-quality nigiri (tuna, mackerel, fluke) with kaiseki-influenced starters like grilled apricot and mizuna salad, salmon sashimi adorned with Saturn peach, and seared Miyazaki beef with garlic shoots. The Michelin Guide notes that 'reservations can be a challenge — so be sure to plan well ahead.' Prix fixe is currently $125 per person.
