Chef Shinichi Aoki spent years as executive chef at Kaygetsu in Menlo Park — a restaurant celebrated enough that Steve Jobs was a regular guest — before eventually closing his Burlingame pop-up Kaiseki Saryo Hachi and reopening in December 2023 in Saratoga as Hashiri Bettei Kaiseki Aoki. The nine-seat counter is a deliberate nod to the Japanese tea room: architecture stripped of distraction, lighting subtle and warm, dishes arriving as the sole focus. The kaiseki ryori tasting menu — named in the tradition of Japanese tea-room fine dining — evolves with the season and showcases the philosophy of 'In Praise of Shadows' (陰翳礼讃), embracing darkness and restraint.
