The chef, described as a 'Bib Gourmand chef from Tokyo,' moved to Paris specifically to open Kisin and uses Japanese flour from Kyushu to hand-roll every udon portion, which is prepared without additives, preservatives, or chemical seasonings. The result is a remarkably pure, elastic noodle that has become a cult favourite among Paris's Japanese community and discerning French diners alike.
