About
Yume Ga Arukara opened in Porter Square in September 2017 as a udon-focused counterpart to Nishioka's ramen-only Yume Wo Katare next door. Executive chef Tomohiro Shinoda was born in Tokyo, raised in Belmont, MA, and trained directly under Tsuyoshi Nishioka, absorbing his teacher's Japanese precision and food philosophy. The restaurant's handcrafted udon noodles — with a chewy, silky texture that reflects proper Japanese technique — made such an immediate impression that Bon Appétit named it one of the top new American restaurants of 2018. While co-ownership includes non-Japanese partner Juan Carlos Vidal, the Japanese culinary leadership from Nishioka (Japanese ramen master) and Shinoda (Tokyo-born executive chef) firmly places this in the Japanese-led kitchen category. A Seaport location opened in February 2024 at 70 Pier 4 Boulevard.
Why it's on Washoku Guide
  • Bon Appétit Top New US Restaurant 2018 — the most decorated debut in the Boston Japanese dining scene in a generation.
  • Tokyo-born chef Tomohiro Shinoda trained personally by Japanese ramen master Nishioka — the lineage runs deep.
  • Handcrafted udon with authentic Japanese texture: a food category underrepresented in serious form across the entire Boston dining landscape.
  • Two locations — Porter Square and Seaport — mean access to the best Japanese noodles in Boston on either side of the river.

Borderline — included based on Japanese culinary leadership (Nishioka, Japanese ramen master; Shinoda, Tokyo-born executive chef). Co-ownership includes Juan Carlos Vidal (non-Japanese). Authenticity field reflects Japanese-led kitchen, not Japanese-owned. Founded 2017. Seaport location opened Feb 2024.
