Chef/founder Carlos Delfino and Executive Chef Oscar Noborikawa — a fourth-generation Japanese descendant who refined his craft over 14 years at Nobu Miami — designed a menu that layers Japanese technique onto Latin and Caribbean flavor instincts. The robata grill drives much of the menu's depth, complemented by a focused sushi selection featuring specialty rolls and a la carte nigiri. Dishes like the Bea Roll (crispy shrimp, fried plantain, avocado, eel sauce) became instant signatures.
