Located steps from the Gran Vía in the heart of Madrid, Miyama Flor Baja is the original and most characterful venue in the Miyama group. Chef Takimura-San, born in Yokohama in 1974 and trained at traditional Chojuan restaurant in Japan, leads a kitchen that has served generations of discerning Madrid diners. The restaurant succeeded the legendary Tokio Taro of sushi pioneer Masao Kikuchi, inheriting both his space and his commitment to Japanese authenticity. Owner Hiroo Miki, from Osaka, ensures that the kitchen standards remain rooted in Japan, making this one of the most reliable addresses for genuine nigiri, sashimi and seasonal Japanese dishes in Madrid. Its evening-only opening on Mondays and Tuesdays gives the kitchen time to prepare fresh fish sourced from Japanese suppliers.
