Owner Jay Hidehisa Joden is not simply a restaurateur — he is a Japanese cattle farmer who raises Kobe and Kagoshima wagyu at Mori Farm in Japan and then serves those same animals at his restaurant in Madrid's prestigious Salamanca neighbourhood. The concept mirrors his London restaurant Tokio Sukiyaki, applying the full range of Japanese beef cookery — sukiyaki, shabu-shabu, yakiniku — to produce certified by the Kobe Beef Marketing and Distribution Promotion Association. Chef Daikichi Saito, the restaurant's European gastronomy delegate, oversees a kitchen that emphasises the integrity of the ingredient above all else. The result is one of Spain's most authentic and exclusive Japanese dining experiences.
