Tucked into a modest West Las Vegas strip mall, Sushi Hiroyoshi is the labor of love of Hiro-san (Hiro Yoshi), a chef who trained for years in Japan before bringing his craft to Las Vegas and refining it further at Blue Ribbon at The Cosmopolitan. The restaurant seats a small number of guests at a traditional counter, where Hiro-san works directly in front of diners — selecting pristine fish, aging vinegared rice to his exacting standards, and delivering each piece at precisely the right temperature and moment. The experience is deliberately unhurried: Hiro-san explains each course, describes the provenance of seasonal fish, and creates the kind of chef-guest connection that defines great omakase. Reservations are required and highly sought after; walk-ins are welcomed only when the counter has open seats. This is as close to a Japan-trained chef's intimate Tokyo counter as Las Vegas offers.
