About
Kabuto was originally opened with Tokyo-born Gen Mizoguchi (of Yui Edomae Sushi fame) at the helm, establishing its Edomae pedigree from day one. Today, under the Japanese-owned Mon Restaurant Group led by Takashi Segawa, the restaurant continues its commitment to traditional Edomae sushi with chef Ken Hosoki directing the kitchen. A nightly prix fixe omakase is the only format — no à la carte, no improvisation — reflecting the Edomae philosophy of trusting the chef entirely. Kabuto accepts reservations for groups up to five, with group reservation calls welcomed between 3–5 PM. Located just down Spring Mountain Road from Raku and Yui, it anchors one of the most concentrated blocks of authentic Japanese fine dining in America.
