Tucked into a Chinatown strip mall steps from the acclaimed Raku, Monta Ramen opened in 2010 as one of the first restaurants to bring serious Japanese ramen culture to Las Vegas. Owner Takashi Segawa, a Japanese national who leads the Mon Restaurant Group (Zenya Inc.), trains his kitchen teams in Japan and sources recipes developed through decades of Japanese culinary tradition. The compact, no-frills dining room fills nightly with locals who line up before opening for bowls of rich tonkotsu, delicate shoyu, and creamy miso ramen — each served with hand-crafted noodles and meticulous broth. The Travel Channel recognition cemented its status as a must-visit, and Monta remains the city's most respected neighborhood ramen shop over a decade after opening. Extra noodles can be added to finish the broth, in the true Japanese noodle-house tradition.
