The newest chapter in the Yama restaurant family, Shun by Yama was launched in January 2025 by Japanese chef-owner Shigekazu Tateno after building four successful Yama Izakaya locations across DFW. Executive chef and partner Kenny Chong, a former Shoyo sushi veteran, helms the kitchen alongside collaborating chef Shinichi Okamoto who trained at Tokyo and Las Vegas institutions. Premium fish — including bluefin tuna, Hokkaido scallop, and seasonal selections — is sourced twice weekly from Tokyo's famed Toyosu Fish Market. Guests can choose from traditional nigiri, composed rolls, and a tiered omakase experience (14-course or 19-course) with reservations strongly recommended.
