Executive chef and partner Kazuhito 'Kaz' Mabuchi was born in Miyazaki Prefecture, Japan, and honed his Edomae technique as sous chef at Michelin-starred Ginza Onodera in Los Angeles before joining Namo in 2022. Fish arrives daily via air shipment from Tokyo's Toyosu Market through Haneda and Narita airports, ensuring the freshest possible product for each service.
