Chef Masami Okamoto, who trained in five-star hotels across the world, leads guests through a 16-course seasonal menu at a walnut sushi bar seating just eight. Dishes evolve with the four seasons — 春夏秋冬 — and draw on the freshest wild-caught seafood and organic wasabi shipped from Japan. Hostess Lin Wang curates an outstanding sake and wine pairing programme to complement each course. Two seatings per evening from Wednesday through Monday ensure the experience is unhurried and deeply personal.
