Mikuriya occupies a private, barely-signposted space on the fourth floor of the Dolder Grand — guests are collected by QR code and escorted to the intimate counter. Japanese chef Atsushi Hiraoka, who has a dedicated following among Zurich's discerning diners, prepares a multi-course omakase (formerly 18 courses) using locally sourced Swiss ingredients alongside premium Japanese imports. Eight guests per evening, seated at a minimalist counter, watch every stage of preparation. Sake pairings are de rigueur. The combination of hotel luxury and Japanese counter discipline creates one of Switzerland's most arresting dining experiences.
