Opened in July 2025 on Löwenstrasse, SEAM is Switzerland's first restaurant devoted to the kappo tradition, a Japanese culinary philosophy emphasising directness, seasonality and the intimate bond between cook and diner. Head Chef Yusuke Katayama, born in Osaka, brings extensive kappo experience to Zürich, preparing dishes including a Kagoshima Wagyu Katsu Sando and delicate Crispy Rice Sushi at an open counter. The interior was designed by award-winning Japanese architect Atsuhiko Sugiyama in collaboration with Zürich's Iria Degen Interiors, creating a space that bridges Japanese aesthetics and Swiss craftsmanship. Seam quickly became one of the most talked-about restaurant openings in the city.
