Daisuke Nakazawa trained under the legendary Jiro Ono at Sukiyabashi Jiro and rose to global fame through the documentary Jiro Dreams of Sushi. His Washington outpost, embedded in the stately Waldorf Astoria at 1100 Pennsylvania Avenue, channels that lineage through a twenty-course omakase of exclusively wild fish. Head chef Masaaki 'Uchi' Uchino, who spent sixteen years at the New York flagship, leads the DC kitchen with the same Edo-style discipline: each piece seasoned in-house, no soy sauce dipping required.
