About
Michael Zhang founded Sansotei in 2012 after honing his craft at Japan's Yamato Noodle School, where he mastered the techniques of Kyushu and Hokkaido ramen traditions. The Dundas Street West flagship became a Toronto institution, famous for line-ups stretching out the door in the dead of winter. Today, Sansotei operates numerous GTA locations — from Adelaide and Fort York to Yonge Street and the Scarborough Town Centre — making it the city's most accessible authentic tonkotsu chain. The Michelin Guide has acknowledged the brand as a standout ramen destination. Specialties include Tonkotsu Black (with black garlic oil), Spicy Tantan, and a tomato ramen featuring Hokkaido scallop.
