In a tile-clad room on Upplandsgatan, Sushi Sho challenges every assumption about Scandinavian Japanese dining. Chef-owner Carl Ishizaki opened in 2014 after more than two decades refining Edomae technique — the Tokyo-bay tradition of aging and seasoning fish with hand-pressed vinegar, soy, and salt — and two years later was awarded Sweden's first Michelin star for an Asian restaurant. The 12-seat counter serves all guests simultaneously in a synchronised omakase, with exceptional local Swedish seafood as the foundation and a sake tasting menu among the highlights. The atmosphere is almost monastically minimal — white tiles, no distractions — placing the entire focus on the fish and the rice. Reservations are essential and much sought after.
