Sushisen stands apart in Rome's Japanese dining landscape for its uncompromising kitchen policy: all sushi chefs are Japanese, each with a minimum ten years of professional training. The restaurant was founded by Kunihiro Giuliano Este, whose Japanese mother Okochi Chikako brought the authentic direction, and is led in the kitchen by Hokkaido-born Yamamoto Eiji.
