Chef Aiuchi Takehiko, hailing from Japan's Kansai region, leads a menu spanning ramen, gyoza, doteyaki and sushi alongside over 160 sake labels — a collection that earned the restaurant the Gambero Rosso 'Valorizzazione del Sake' special prize in 2025.
