About
Sushi Wasabi was founded by Katsu Aoyagi, who alongside Shige Shibutani of Sushi Shibucho was considered one of the two great Japanese sushi masters who established the OC sushi tradition. When Aoyagi retired in 2014, the restaurant was sold with the pure-omakase concept preserved: no fixed menu, handrolls only, counter seating, and daily-sourced fish. Monster Munching (2008) called it 'the best traditional sushi in OC.'
Neighborhood & visiting
Sushi Wasabi sits in Tustin, one of Los Angeles's neighborhoods where authentic Japanese kitchens have taken root. The house does not publish an online booking link; call ahead to secure a seat, especially on weekends. Check the posted hours before you go — traditional sushi restaurants often close between service periods.
