Kanada-Ya Piccadilly occupies a compact site on Panton Street just south of Piccadilly Circus, and has built a loyal following for its unhurried approach: no reservations, walk-in only, and every bowl made with the same 18-hour tonkotsu broth that founder Kazuhiro Kanada perfected in his hometown of Yukuhashi, Fukuoka in 2009. The restaurant showcases the evolution of the Kanada-Ya menu, including the truffle ramen — a London-original variation introduced at this and other branches — alongside the classic Origin Tonkotsu and the signature Tonkotsu X. Kazuhiro Kanada, a former professional cyclist who left the peloton to pursue ramen mastery, remains the owner and creative force behind all UK sites.
