The 18-hour-simmered pork-bone broth, served with handmade alkaline noodles and slow-braised chashu pork belly, earned Kanada-Ya rapid critical acclaim and a place among London's most recommended ramen destinations. The St Giles branch sits directly across from Ippudo, and the two restaurants helped establish the WC2H area as London's ramen heartland. Kazuhiro Kanada retains full ownership of the business, preserving the independent, craft-led spirit of the Yukuhashi original.
