Like all Kanada-Ya sites, it serves the 18-hour pork-bone tonkotsu broth developed by founder Kazuhiro Kanada from Yukuhashi, Fukuoka, who left professional cycling in 2009 to pursue ramen mastery. The Carnaby branch is notable for its alfresco dining capacity, unusual for a ramen bar, and draws both the Soho retail crowd and evening diners seeking a reliable bowl before a night out. Kazuhiro Kanada retains independent ownership of the entire UK estate.
