About
Opened in November 2022 in DIFC's Al Fattan Currency House, Hidemasa is the personal restaurant of Chef Hidemasa Yamamoto, who began his culinary career in 1977 and rose to become Executive Chef of Mandarin Oriental Tokyo, the city's three-Michelin-star flagship. He later founded Hide Yamamoto at Marina Bay Sands in Singapore, served presidents at the Ritz-Carlton in Washington D.C., and trained under legendary French chef Roger Vergé in Provence. In Dubai, Yamamoto has created an intimate, minimalist Japanese space in DIFC that channels his decades of multi-continental fine-dining experience. The menu features an omakase nigiri course (nine kinds, AED 350), chef's selection sashimi (AED 480), wagyu, black cod, and signature teppanyaki. A Saturday brunch runs from 14:00–17:00. Ingredients are flown daily from Japan. The restaurant was awarded the Global Chef Award by the World Gourmet Summit in 2010.
