About
Udon Mugizo occupies the second floor of the Japan Center's West Building, operated by Hayward-based EK Food Services Inc. under founder Eiichi Mochizuki, the Japanese restaurateur who also runs Marufuku Ramen. The restaurant showcases Sanuki-style udon craftsmanship: thick, chewy noodles are hand-pulled and cut fresh on-site daily — visible through a glass window — and paired with a range of broths and sauces that span traditional dashi, tempura, and the signature mugizo cream (salmon spinach cream sauce). The dedication to fresh noodle-making within a Japan Center food hall gives the restaurant an unusually high ceiling of quality.
