Japanese restaurateur Satoshi Ikuta founded Ramen Nagi in Japan in 2004 and built it into a network of over 35 locations across Asia before choosing Palo Alto's downtown Bryant Street for the brand's US debut in June 2018. The signature experience is a fully personalized ramen: a Crayola marker and paper menu handed to guests in line lets them dial in broth richness, spice from 1 to 10, noodle thickness, garlic level, and toppings. Four broth bases — Original tonkotsu, Red (spicy miso), Black (squid garlic), and Green (basil pesto) — anchor the menu, with seasonal and limited-time variations.
