Founded in 2017 by Japanese restaurateur Eiichi Mochizuki through his Hayward-based EK Food Services Inc., Marufuku Ramen brought authentic Fukuoka-style tonkotsu ramen to San Francisco's Japan Center, quickly becoming one of the most sought-after bowls in the Bay Area. The operation is rooted in Japanese tradition: pork bones simmer for more than 20 hours to produce the signature milky, umami-laden broth, paired with ultra-thin artisanal noodles and housemade chashu. Under the EK Food Services umbrella, Marufuku has since expanded to Oakland, Texas, and Nevada, but the Japantown flagship remains a perennial draw with no-reservation walk-in lines.
