Akio Ishito is one of Southern California's most experienced Japanese chefs, having previously operated Kappo Ishito in Los Angeles's Little Tokyo before establishing Kokoro in San Diego. His training encompasses the full breadth of washoku — the art of Japanese cuisine — expressed through kaiseki multi-course meals, kappo cooking, and traditional sushi. The restaurant's name, 'kokoro' (心, heart/soul), reflects Ishito's philosophy of putting his whole self into every preparation.
