Kinme Omakase, the fine-dining extension of Azuki Sushi, seats only ten guests per seating in a rarefied counter experience that blends traditional kaiseki structure with Edomae sushi precision. Co-owners Shihomi Borillo (Yokohama-born) and chef Nao Ichimura (Japanese) source fish directly from Tokyo's renowned Toyosu Market, ensuring access to seasonal Japanese varieties unavailable elsewhere in San Diego. Two seatings per evening mean that every guest receives the chef's full attention through a multi-course progression of perfectly aged and dressed nigiri, delicate cooked preparations, and thoughtfully selected sake.
