About
Jesse Ito trained for over a decade under his Japanese-born father Masaharu Ito at the family's Fuji restaurant in New Jersey before opening Royal in 2017. Self-described as a Japanese chef ('My dad is a Japanese chef from Japan. Professionally, I'm a Japanese chef'), Jesse has earned eight James Beard nominations including Best Chef Mid-Atlantic finalist in 2024. Craig LaBan of the Philadelphia Inquirer awarded four bells — the paper's highest honour. The izakaya floor operates walk-in only and lines form before the 5 PM opening; the rear 8-seat omakase counter requires reservations booked weeks in advance. Fish is sourced from Japan and prepared with traditional Edomae techniques: dry-aging, salt-curing, and seasonal variety.
