About
Kyoto-born Hiroki Fujiyama trained under Iron Chef Masaharu Morimoto for nearly 15 years at Morimoto Philadelphia before opening his own intimate counter in 2019 in Fishtown. The restaurant quickly gained Michelin Guide recognition for its disciplined and expressive omakase, in which Fujiyama stands at the counter nightly and narrates each course with quiet precision. In 2024 the restaurant expanded its offering to include an à la carte menu, making the quality more accessible without compromising the counter's integrity. The Philadelphia Inquirer called Fujiyama 'Kyoto-born' and documented his sustained commitment to the craft. Resy manages reservations for both the omakase and new à la carte seatings.
