Hidden on Saint-Laurent Boulevard in Mile End, Sushi Nishinokaze offers one of the most rarefied Japanese dining experiences in Canada. Chef-owner Vincent Gee trained under Taishi Shintaro Suzuki at Nishiazabu Sushi Shin, a Michelin-starred Tokyo sushiya, and brings the full rigour of Edomae technique to his eight-seat counter. The ~$431 all-inclusive menu — paid in full at reservation — features seasonal wild seafood enhanced by artisanal red vinegar sourced from Japan and natural heritage rice, presented in a sparse, gallery-like aesthetic that honours the minimalism of traditional Japanese craft.
