Zuicho's chef-owner Fumio Suzuki is a Tokyo native who trained at Kita-Ooji and then spent years as head chef at the celebrated Ginza Uchiyama, a restaurant that accumulated over ten consecutive Michelin stars — a track record that speaks to his classical kappo foundations. He opened Zuicho in Sheung Wan in 2019 and earned his first Hong Kong Michelin star two years later.
