Fujiya was conceived by Takahiro Mogi, a Japanese restaurateur from Hachioji in Greater Tokyo, who brings the neighbourhood izakaya spirit of Japan to Dubai. Chef Aiko Hayakawa, who transitioned from professional sumo wrestling to Japanese cuisine, leads a kitchen that imports premium ingredients directly from Japan, including A4 and A5 wagyu beef, fresh seafood, and specialty condiments.
