Daisuke Utagawa was born and raised in Tokyo before purchasing DC's Sushiko in 1988, becoming one of Washington's most respected Japanese restaurateurs. His Daikaya ramen shop, opened in 2013, pays tribute to Sapporo-style ramen — characterized by its rich miso-laced pork-bone broth and wavy noodles — which Utagawa associates with his Japanese upbringing. Chef-partner Katsuya Fukushima made multiple research trips across Japan to nail every element of the recipe. The result is widely considered DC's benchmark ramen: deeply savory broths (including a vegan option), chewy noodles made fresh, and house-cured chashu. Seating is walk-in only on the first floor; the izakaya above accepts reservations separately.
