Marukame Udon (Marugame Seimen in Japan) is operated globally by Toridoll Holdings Corporation, a Tokyo Stock Exchange-listed company that brought the concept to Australia through director Hidetoshi Tsuboi in December 2013. The Chatswood location serves thick, chewy Sanuki-style udon in a dashi broth made to the same recipe used across Toridoll's Japanese stores. Noodles are made fresh daily on-site, ensuring the characteristic springy bite associated with artisanal udon. Tempura toppings, rice balls, and inari are freshly fried throughout service.
