Founded by Japanese-born James Beard semifinalist Shinji Kurita and now led by Tokyo-trained executive chef Tanaka Ken, ShinBay remains Arizona's most immersive omakase experience. Two seatings of up to six guests per chef unfold over two hours, tracing through seasonal sashimi, pristine nigiri sourced largely from Japan's Toyosu market, and carefully composed hot courses. The minimalist private dining room in Old Town Scottsdale creates the sensation of dining in Tokyo without leaving the Valley.
