The menu covers sushi, sashimi, chirashi, and osuimono alongside European-Mediterranean pairings: Mazara del Vallo prawns with yuzu, Calvisius caviar, and signature bento at lunch. Japanese chefs Maruyoshi and Shimazu now lead the sushi programme, maintaining the disciplined standards of the Paris original.
