Sharing an entrance with IYO Kaiseki at the foot of Torre Solaria, IYO Omakase operates as a fully independent experience: seven seats, two sittings per evening, and a completely improvised menu built on whatever premium fish and seasonal produce the chefs source that day. The format is rooted in Edo-period edomae sushi tradition — nigiri prepared to order in front of guests, supplemented by small composed courses that move through cooked fish, soups, and aged proteins. Culinary Director Takeshi Iwai, who has lived and cooked in Italy for over 14 years, bridges Japanese precision with a deep familiarity with Italian ingredients. The result earned Gambero Rosso Tre Bacchette recognition in 2025. Advance booking is essential; both evening sittings fill weeks ahead.
