Hayato Miami is the Wynwood outpost of the Shimuja Group, led by Kagoshima-born ramen master Keiichi Maemura. Nestled inside the Asian food hall 1-800-Lucky (opened 2018), Hayato serves the Wynwood creative community with the same 18-hour tonkotsu ramen that Maemura perfected in Japan. Before embarking on his U.S. venture, Maemura operated two Shimuja locations in Japan and first brought his concept to South Florida as a pop-up in 2016. Hayato represents the more elevated izakaya and ramen format within the Shimuja family.
