When Keigo Onoda opened Ramen Kagura near the Madrid Opera House in 2014, he brought what the city had never had: Japanese-founded, Japanese-directed artisan ramen. Born in Shizuoka, Onoda worked with partner Akimasa Kawata — also Japanese and a trained Tokyo chef — to create broths and noodles from scratch rather than using the industrial shortcuts common in lesser ramen shops. The success was immediate and lasting: Ramen Kagura now has 25 locations across Spain, making it the country's most significant Japanese ramen brand by any measure. The original flagship on Calle Las Fuentes remains the benchmark, offering tonkotsu, miso, shoyu and tantanmen ramen served daily for lunch and dinner. For founder Keigo Onoda, the recognition of his work came full circle with the Medalla de Oro al Mérito en el Trabajo, Spain's highest civilian honour.
