Toku Unagi & Sushi is operated by Toku Co., Ltd. (株式会社徳), based in Hamamatsu, Shizuoka, where the company traces its origins to 1909 as an eel market. Owner Takeharu Kawai imports live eel weekly from Japan and uses a tare sauce recipe unchanged for over a hundred years. The West Hollywood location, one of 11 Toku outlets worldwide, is the only unagi specialty restaurant in Los Angeles.
