Opened in 1997 by Japanese chef and owner Nobu Matsuhisa as the first European outpost of his global Nobu brand, Nobu London Old Park Lane sits on the first floor of the COMO Metropolitan Hotel overlooking Hyde Park. The restaurant introduced London — and Europe — to Nikkei cuisine: Matsuhisa's unique fusion of Japanese technique with Peruvian and South American ingredients, a style he developed during years of cooking in Peru and Argentina before opening his first restaurant in Beverly Hills in 1987. The London flagship earned a listing in the Michelin Guide and 2 AA Rosettes, and its black cod miso — marinated for days in den miso then baked and grilled — remains one of the most copied dishes in the history of London dining. The 150-cover restaurant includes a separate sushi bar and private dining facilities.
