Together they describe Himi as London's first neo-izakaya, an homage to the bustling drinking and dining dens of Tokyo and Osaka where seasonal Japanese cooking meets rare sake and cold beer. The menu changes with market availability, channelling Hasegawa's deep washoku training alongside Naszai's European fine-dining technique.
