Perched above the Bosphorus in the boutique Bebek Hotel by The Stay, Sankai by Nagaya brings together Düsseldorf's celebrated three-Michelin-star chef Yoshizumi Nagaya and Edomae specialist Hiroko Shibata in Istanbul's most coveted omakase setting. The 24-seat dining room, designed by Geo-ID with input from architect Mahmut Anlar, envelops guests in a minimalist Japanese aesthetic while delivering sweeping water views. Two tasting menus anchor the experience: the Sankai Sushi course showcases traditionally seasoned Edomae nigiri using local Bosphorus fish, while the Nagaya Signature traces Nagaya's kaiseki philosophy through modern European inflections such as 48-hour slow-cooked veal cheeks with ponzu mayonnaise. Awarded the Michelin Star in November 2023 and 5 Pearls by the İncili Gastronomy Guide, it is the benchmark of authentic Japanese fine dining in Turkey.
