Nestled inside the Tagawa Japanese grocery at Stockel Square, Ramen Nobu captures the unpretentious magic of a Japanese mall ramen counter. Chef Nobutomo Ishi — brought to Brussels by Michelin-starred Japanese chef Tomoyasu Kamo of the celebrated restaurant Kamo — serves six varieties of ramen including shio, shoyu, miso, kara miso, tonkotsu, and a rare vegetarian option. Le Fooding described the setting as having 'the sleazy charm of mall canteens like you only find in Japan', with two chefs working in silence at a wooden counter. Prices range from €16–19 per bowl. This is one of the few spots in Belgium where authentic Japanese ramen technique is verifiable through direct lineage to Japan's dining culture.
