Tetsu Sushi Bar is a West End institution built on the singular philosophy of its Japanese chef-owner Satoshi Makise: to offer authentic Edomae-style sushi without compromise or concession. Opened in 2017 at 775 Denman Street, the 12-seat counter format puts guests face-to-face with the craft of traditional nigiri making. Michelin Recommended since the guide launched in Vancouver, Tetsu was also ranked #47 on Canada's 100 Best Restaurants in 2022. Makise's approach honours the Edomae tradition—hand-pressed nigiri with seasoned rice, aged fish, and precise seasoning—making every visit a lesson in the building blocks of Japanese sushi. The restaurant operates Tuesday through Sunday, with reservations strongly advised.
