Opened in 2010 in San Francisco's fog-belt Inner Sunset neighborhood, Izakaya Sozai is among the city's most enduring Japanese izakayas, operated by Japanese-born chef-owner Ritsu Osuka. The menu is a faithful representation of the izakaya tradition — yakitori skewers grilled over charcoal, a rich tonkotsu ramen built from a pork broth that takes days to develop, and a rotating cast of small plates that change with the season. Osuka is also credited with originating the spicy tuna on crispy rice, a dish that has since become a staple at Japanese-influenced restaurants across the country.
